Not enough to hire someone to run the shop on Mondays and Tuesdays, apparently!
it’s not a Midwest exclusive experience as it’s fairly standard for restaurants and smaller businesses to be closed for obvious reasons.
At least in my years of travel and interactions with a variety of small companies.

Mondays are typically low profit days.
People aren’t shopping on Mondays historically and for small restaurants, Mondays are often resupply days
not really because you have to pay employees and other costs. some small businesses dont come out ahead on slow days

I suppose I'm basing this on my experience at bars, restaurants, and co-ops. I've served on boards, been treasurer, secretary/bookkeeper, bartended and cooked & have seen the dollar value in being open when others are not. People still get hungry and thirsty on Mondays.
But these experiences are in towns of 3-6k people and might not be at all relevant elsewhere.

Our first trip to Chicago was in like 2007 or something. We were around the Sears tower area at 6 pm on a Sunday and couldn't find a eatery open. We were flummoxed.

I think Useless Moron Scott Keith spread the bad info decades ago about how David went against Fritz' wishes and went to play heel in Florida. FFWD a few years when WIFI became a thing and we see clips of Fritz playing heel in Florida with his boys.
